Dark Chocolate Cookies - no flour


Dark Chocolate Cookies (made with no butter or flour!)

Makes about 2 dozen

 

·         Non stick vegetable oil spray

·         1 1/2 cups bittersweet chocolate chips, divided

·         3 large eggs whites (room temperature)

·         2 1/2 cups powdered white sugar, divided

·         1/2 cup unsweetened cocoa powder

·         1 TBSP cornstarch

·         1/4 TSP salt

 

Preheat oven to 400. Spray 2 baking sheets with non stick spray.

 

Melt 1 cup choco chips in glass bowl  in microwave, stirring twice, about 2 minutes then cool slightly.

 

Using electric mixer, beat egg whites to soft peaks then gradually beat in 1 cup sugar. Continue beating til it resembles marshmallow creme.

In another bowl, whisk 1 cup sugar, cocoa, cornstarch and salt.

On low speed, beat dry ingredients into meringue. Stir in lukewarm chocolate and 1/2 cup of chocolate chips. (Dough will become very stiff).

 

Place 1/2 cup of sugar in bowl. Roll 1 rounded tablespoon of dough into ball, then roll in sugar coating thickly. Place on prepared cookie sheet 2 inches apart. Bake until puffed and tops crack. Cool for 10 minutes on rack then transfer to plate.
